So easy, a boyfriend could do it!

I've never had a significant other cook for me, so I was ecstatic when the bf offered up his cooking expertise. Luckily for me, (and to eliminate all risk) I had already tasted this dish when his parents cooked it for us a few months back. These spicy little pockets are called "Chimichitos" and are taken off of the Sam The Cooking Guy web site. They are a combo of Burrito & Chimichanga and are baked not fried.

They were delicious and quite spicy! There's even a video on the web site!

INGREDIENTS:

Makes 4 Servings

•4 cups cooked chicken, shredded
•1/2 white onion, chopped
•1-4oz can diced green chilies
•1 cup picante sauce
•1 cup enchilada sauce
•Shredded cheddar cheese
•Sour cream
•Cilantro
•4 flour tortillas, burrito size

DIRECTIONS:

1.Heat oven to 400
2.Saute onions in a little oil in a skillet
3.When softened, add chicken, picante sauce and green chiles
4.In a separate pan, heat the enchilada sauce
5.Heat tortillas to make them pliable
6.Spoon 1/4 mixture on each tortilla and roll up restaurant style
7.Place on a greased pan and rub top of burrito lightly with oil
8.Bake until golden, about 10-15 minutes
9.Spoon warm enchilada sauce on a plate, lay chimichito on top, add a spoonful of sour cream and sprinkle with cheese and cilantro
